In the stock pot add the butter and put it on the stove on high heat until butter starts melting .
Once it has melted down, cook on medium low heat for 30 minutes.
stir occasionally .
Put the heat down to low for another 30 minutes until it's dark brown and you can see milk particles underneath.
Now very carefully add the cream and mix. make sure it doesnt overflow sokeep the heat very low. Cook another 30 minutes until you see a dark layer of foamy malai.
Turn off the heat and let it rest for 30 minutes
Strain a couple of times and preserve it in a clean glass jar.
Use in your cooking or simply enjoy it on gorom bhaat.
