Bangladeshi beef with shatkora curry.

Beef with Shatkora Curry is a traditional Sylheti dish from Bangladesh, featuring tender beef slow-cooked with aromatic spices and shatkora, a citrus fruit native to the region. The shatkora adds a unique tangy and slightly bitter flavor, making this curry rich, fragrant, and perfect for pairing with steamed rice, chitoi pitha, pulao etc.

Ingredients
  

  • 1 kg beef with bones and fat
  • 2 whole shatkora cut in 8 wedges.
  • 3 cups chopped onion
  • 1 cup mustard oil
  • 2 tsp chili powder
  • 1/2 tsp turmeric powdr
  • 1 tsp coriander powder
  • 1 tsp garam masala powder
  • 2 bayleaves
  • 4 cardamom
  • 2 Cinnamon
  • 1 tbsp salt
  • 2 whole garlic
  • 1 tbsp ginger garlic paste
  • 3-4 green chili

  • 1 pot

Method
 

  1. In a bowl/or in the pot add the beef, and all the ingredients listed above, except for the shatkora and whole garlic.
  2. Mix everything very well.
  3. put it on a stove. cook everything on medium-high heat until the oil seperates and the onion starts to soften.
  4. add three cups of water and cook for 40-60 minutes on medium-low heat, covered.
  5. stir in between.
  6. after 60 minutes, add shatkora, some extra gorom moshla, green chili and give it a mix. add a cup of water at this stage if you want gravy.
  7. Now simmer slow and low for another 20-30 minutes until meat is extra tender and soft.
  8. enjoy with rice, chitoi pitha, pulao or roti.
