Full Recipe Guide To Make The Perfect Dudh Chitoi Everytime!

Dudh chitoi

Dudh Chitoi is a classic Bengali dessert made by soaking soft and fluffy rice flour pancakes (chitoi pitha) in sweetened, thickened milk (dudh). The pancakes are cooked on a clay griddle or flat pan, giving them a light and airy texture with a slightly crispy edge.
The rich milk, flavored with jaggery, sugar, and sometimes cardamom, is poured over the chitoi, allowing them to absorb the sweetness and become irresistibly soft. This comforting dessert is a winter staple, especially during traditional Bengali festivals, offering a delightful combination of simplicity and indulgence.

Equipment

  • 1 clay pot/cast iron mold for chitoi
  • 1 pot/saucepan for the milk mixture

Ingredients
  

  • 3 cups rice flour homemade or store bought
  • 1 tsp baking powder
  • 1 tsp salt
  • 4-5 cups lukewarm water

For milk mixture

  • 500ml 4cups reduced down to half
  • 2 cups jaggery syrup
  • 1 cup freshly grated coconut
  • 1 cardamom
  • 1 cinnemon

Instructions
 

  • In a bowl add rice flour, salt, baking powder, and mix.
  • gradually add water and make a thick sticky batter. use your hand to break any lumps and mix very well for a few minutes.
  • After a few minutes of mixing the batter with your hand add the rest of the water slowly and using a stick blender blend until smooth.
  • the consistency would be not too thick but not watery.
  • rest 10-15 minutes.
  • In the meantime make the milk mixture, by adding milk in a pot, add cardamom and cinnamon and simmer on low until for 10-15 minutes
  • Now cool it down completely before adding the jaggery syrup and coocnut. this will ensure the milk doesn't curdle.
  • once the mixture is ready, set it aside.
  • Heat up the cast iron karai. pour one ladle of batter at times, cover and cook for 2 minutes on high flame. uncover and scrape the edges. if it's cooked it should ome off easily.
  • Repeat and make the rest of the pitha.
  • now add the milk mixture back on the stove on a very low flame. add all the pithas and submerge them into the milk mixture. rest overnught to make sure the pithas have soaked up all that delicious creamy milk and became soft and juicy on the inside.
  • Enjoy the next morning for the best dudh chitoi.

Lazy Crumpet dudh chitoi

  • Follow the same steps for the milk mixture , i also like to add cream/condensed milk often. add a few chopped alomds and pistachios as well.
  • Microwave the curmpets for a minute or so to soften them
  • Then submerge them into the milk mixture and soak for a few hours.
  • serve and enjoy.
